Mike’s Melons Oat & Melon Crumble
A light yet comforting dessert: Mike’s Melons baked with a hint of honey and cinnamon, topped with a golden oat and butter crumble.
Ingredients:
3 cups Mike’s Melons, cubed
1 tablespoon honey or sugar
Juice of 1 lemon (just a few drops)
½ teaspoon cinnamon
For the crumble:
½ cup rolled oats
¼ cup flour
3 tablespoons brown sugar
3 tablespoons cold butter, cubed
A pinch of salt
Instructions:
Prepare the filling: Mix the melon with honey, a few drops of lemon juice, and cinnamon. Place in an oven-safe dish.
Make the crumble: In another bowl, combine oats, flour, sugar, and salt. Add the butter and rub with your fingers until the mixture looks crumbly.
Assemble the dessert: Spread the crumble mixture over the melon.
Bake: Place in the oven at 180 °C (350 °F) for 25–30 minutes, until the top is golden brown.
Serve warm, on its own or with yogurt or ice cream.
