Mike’s Melons Oat & Melon Crumble

A light yet comforting dessert: Mike’s Melons baked with a hint of honey and cinnamon, topped with a golden oat and butter crumble.

Ingredients:

  • 3 cups Mike’s Melons, cubed

  • 1 tablespoon honey or sugar

  • Juice of 1 lemon (just a few drops)

  • ½ teaspoon cinnamon

For the crumble:

  • ½ cup rolled oats

  • ¼ cup flour

  • 3 tablespoons brown sugar

  • 3 tablespoons cold butter, cubed

  • A pinch of salt

Instructions:

  1. Prepare the filling: Mix the melon with honey, a few drops of lemon juice, and cinnamon. Place in an oven-safe dish.

  2. Make the crumble: In another bowl, combine oats, flour, sugar, and salt. Add the butter and rub with your fingers until the mixture looks crumbly.

  3. Assemble the dessert: Spread the crumble mixture over the melon.

  4. Bake: Place in the oven at 180 °C (350 °F) for 25–30 minutes, until the top is golden brown.

  5. Serve warm, on its own or with yogurt or ice cream.
