Mike’s Melons & Hearts of Palm Ceviche
A fresh, vibrant dish that brings together the juicy sweetness of Mike’s Melons with the delicate texture of hearts of palm, enhanced by zesty lime juice and crisp vegetables. Perfect as a light starter or a healthy snack.
Ingredients (serves 2–3):
1 cup cantaloupe or honeydew Mike’s Melons, diced small
1 cup hearts of palm, thinly sliced (canned, drained)
¼ cup red onion, thinly sliced into julienne
¼ cup red bell pepper, diced small
Juice of 2 limes
2 tbsp olive oil
1 tsp honey (optional, to balance acidity)
Salt and pepper to taste
1 tbsp fresh cilantro, chopped
Fresh chili or jalapeño slices (optional, to taste)
Crackers or tostadas to serve (optional)
Instructions:
In a large bowl, combine the melon, hearts of palm, onion, and bell pepper.
In a separate small bowl, whisk together lime juice, olive oil, honey (if using), salt, and pepper.
Pour the dressing over the melon mixture and toss gently to combine.
Add chopped cilantro and chili slices if you want a spicy kick.
Refrigerate for at least 15–20 minutes to allow the flavors to meld.
Serve chilled as a starter, with crackers or crispy tostadas on the side.
